I have seen many people who love corn. Corns are the delicious treat of summers. The only problem with the corns is that when you harvest the crop of corns in summer, you have them abundantly available in the market but the rest of the year you find none. You can solve the problem by freezing corn for you so you can enjoy the taste for the rest of the year. Freezing corns is not so easy as freezing other vegetables and meat stuff.

§         First you have to buy the corn. You should wait until mid of the August to go and buy bulk corn. It will be much cheaper at this stage and more ripened as well. You can ask your local vegetable farmer and can buy corn on the cob by bushel. It will also save you money.

§         Now, you have to husk the corn. You can ask your kids to do that. They will really enjoy the fun. Give your child a paper bag and some ears of corns. Ask them to peel off all the coverings of the corn and silk. This can create a lot of mess, so it will be a better idea if you do this outside. Take a large bucket to keep these husked corns on the cob and bring it inside.

§         Take a large pot. A large roasting pan is a better option. Put it on stove to let it boil.

§         Take two pots that are large enough to keep at least four ears of corn on the cob in them. Fill these pots with ice-cold water.

§         Now you have to blanche the corn. Once water gets to boil add corn on the cob to the pot of hot water. The corn on the cob should be completely covered by hot water. Put few other corns but make sure that all of them are completely dipped into water. Boil them for three minutes.

§         Remove all the corns after three minutes from hot water and put them into the pot full of ice-cold water. Refill the pot of hot water with new corns. Keep the batch of corns in the cold water until the new batch is in process. When the next batch is ready, move the corns to the next ice-cold water bath. Repeat the process of blenching and shocking until you are done with all the corns.

§         Freezing the whole corn can be troublesome so you can cut off the corn in pieces. If you want corn to retain its sweetness, freeze them along with the cob. Use a corn cob cutter for the purpose. But, if you don't have the cutter, you can simply use a knife but be careful if you do. 

§         Take freezer bags and put corns inside. Squeeze out all the air while sealing. Place the bag in freezer. You can use them for one year if you have sealed them properly.
