Corn Pie

If you live in the south, you have probably eaten some really good corn pie. It is often categorized as southern food. The following paragraphs will provide an easy corn pie recipe that feeds six.

The first thing you need to do before doing anything else is preheat your oven. It needs to be preheated at 400 degrees for this recipe.

To make things quick and simple, you will need to start with a pre-made pie crust you can get at your grocery store. The kind you use for your regular pies will work just fine. This will cut out the time it would take to make your pie crust from scratch.

Preparing the pie filling is almost as simple. The ingredients you will need are:

  • * 2 cups of cooked corn

  • * 3 eggs

  • * Approximately 1/3 cup of cream or half and half

  • * 2 tablespoons of chopped onions

  • * Approximately 1 teaspoon of salt

  • * Approximately ½ teaspoon of salt

  • * 1 cup of grated cheese (cheddar)

  • * 6-8 pieces of partially cooked bacon

Once you have all the ingredients together, the hardest part is done! All you have to do now is mix the ingredients to make the filling and bake your pie!

To make your pie filling you need to mix the eggs, cream, and salt and pepper first. Beat those ingredients in a bowl until the mixture is smooth. Prepare this the same way you would prepare scrambled eggs.

Next, add the corn, chopped onions, and cheese to the egg mixture. Be sure to mix it all together real well. Then pour the mixture into your pre-made pie crust.

Once the mixture is poured evenly into your pie crust, you are almost done with the preparation. All you have to do now is place the limp bacon strips on top of the mixture. Place them around the pie like bicycle tire spokes.

All you have to do now is bake your corn pie! Put it in your oven and bake for approximately 40 minutes. This recipe serves six! It is quick and easy and something the entire family will love.
